Instructions:

For the potato spaetzle dough, mix all ingredients well, season and knead into a smooth dough. Cover and let rest for half an hour. Pipe the dough through a spätzle strainer into boiling salted water, wait for the spaetzle to rise and boil for 1 minute. Remove the spaetzle with a perforated scoop, rinse with cold water.

For the tomato sauce, heat the olive oil and sauté the onion and garlic. Add the tomato sauce, cream, cheese and beef stock and season. Simmer for about 10 minutes, stirring well with a whisk every now and then. Then serve with basil.
