For the Potato and Bacon Gröstl with Egg, first peel the potatoes (preferably already cooked the day before) and cut into slices. Cut the bacon into fine strips as well. Chop the onion finely.

Put clarified butter in a pan and fry the potatoes in it until golden brown. Move the potatoes a little to the side and then fry the bacon and onion in the pan. Mix in with the potatoes, season with the spices. Beat the eggs into the pan and mix with the potatoes until the whites have curdled.

Finally, chop the chives and sprinkle over the potato and bacon gröstl with egg.
