Potato Apple Horseradish Salad

Instructions:

Peel potatoes and cut into thin slices.

Peel celery and cut into pieces 12cm thick.

Peel and finely dice shallots.

Peel horseradish and grate finely.

Wash parsley, pat dry, pluck leaves from stems and chop finely.

Squeeze juice from lemon.

Peel, quarter, core and coarsely dice apples and drizzle with lemon juice.

In the meantime, heat vegetable cream in a pan, saute celery and shallots in it, over medium heat for about 2 minutes.

Mix cremefine, vinegar, vegetable broth, salt, sugar, pepper and horseradish with a whisk to make dressing.

Place potatoes and apples in a bowl, add dressing, onion, celery vegetables and parsley, fold in and let sit for about 30 minutes.

Then season again strongly and serve.
