For the potato croquettes, cook the potatoes in steam until soft, peel while still hot and press through a potato ricer.

Mix with yolk, butter and the spices, roll into finger-length and thick pieces and let cool.

Roll in flour, beaten egg and then in breadcrumbs. Heat oil in a pot and deep-fry the croquettes in it until golden brown.
