Instructions:

For potato noodles with wild garlic sauce, first prepare the potato noodles.

For the potato noodles, cook potatoes and press them while still hot. Add the remaining ingredients and knead the dough together. Divide the dough into several portions, form each into a roll (about 5 cm) and cut noodles (about 1 cm thick). Form noodles from them with your hands. Cook the noodles in plenty of salted water for about 10 minutes, then strain.

For the wild garlic sauce, wash and finely chop the wild garlic. Chop the onion finely. Heat the oil and sauté the onion and wild garlic. Add Cremefine and simmer for about 10 minutes at low heat. Stir in the crème fraîche. Cut the ham into small pieces and stir in as well. Mix the potato noodles with the sauce, serve and sprinkle with freshly shaved Parmesan.
