For the potato rösti, peel peppers, remove seeds and cut into 1 cm long fine strips. Cut smoked meat in the same way.

Peel carrot and tear with a coarse grater. Peel onion, cut in half lengthwise, cut each half again into three parts and then into fine strips.

Peel and finely chop the garlic. Finally, peel the potatoes and also tear with a coarse grater and squeeze vigorously. (Works best if you put them in a cloth and twist them together vigorously).

Mix all ingredients, season and fry in olive oil. To do this, heat the oil in a large non-stick pan, add the mixture and spread evenly, pushing the edges together.

Then reduce the heat (ceramic hob level 5). Cover the hash browns with the shiny side inside with aluminum foil and let them bake for about 8 minutes.

Place a plate on top of the aluminum foil and invert the entire pan. Slide the hash browns with the second side into the pan. Cover again and bake the second side also for about 8 minutes. (It should then look like the photo).

Finally, place the plate back on the foil, invert the entire pan and slide the rösti onto a plate.

Serve the potato rösti.
