Instructions:

For the potato salad, boil the potatoes in their skins until soft, peel while still warm and cut into thin slices.

Mix well salt with white pepper, a pinch of sugar, vinegar, warm beef broth, chopped onion and oil and empty over the potatoes.

Fold into the mixture and bring the potato salad to the table sprinkled with chives.
