For the potato salad, boil the potatoes with skin, let cool slightly, peel and cut into cubes. Boil eggs, peel and cut into small pieces.

Also chop the pickled gherkins and onion (peeled) and mix with eggs and potatoes in a bowl.

For the mayonnaise: mix egg yolks with mustard until smooth, add salt and pepper, stir with a hand mixer and add the oil drop by drop until the mayonnaise becomes firmer.

Finally, season with sugar and vinegar. Mix into the potato salad and then season again with salt and pepper.
