For the potato slices boil potatoes in salted water, peel and mash with a fork. Wash leek and cut into fine strips, sauté in butter.

Add potatoes and season with herbs, salt and pepper. Stir in olive oil. Blend to a homogeneous mass.

Line a baking pan with baking paper, place the first sheet of puff pastry, spread the mixture on top (2 cm thick) and cover with the second sheet of puff pastry, pressing it down lightly.

Prick with a fork and brush with beaten yolk. Refrigerate for 2 hours, then bake the potato slices at 185 °C for 15 minutes.
