For the potato soup, cut the spring onions into fine rings, also use some of the onion greens. Peel and finely chop the garlic, pluck the tarragon leaves from the stems and chop them as well. Peel the potatoes and cut them into fine strips or shave them with a kitchen slicer. Process immediately so that they do not turn brown.

Heat butter in a pot and fry potato strips and onion rings. Add garlic and tarragon and fry. Pour in the vegetable soup and cook for 5 minutes (the potato strips should not boil over!). Season to taste with salt, pepper and nutmeg.
