For the potato zucchini tomato gratin, wash zucchini and tomatoes and cut into thin slices. Peel potatoes, onions and garlic and also cut into thin slices.

Layer vegetables alternately in a baking dish, creating rows. Season with salt and pepper. In the meantime, preheat oven to 200 degrees.

Wash and chop the herbs and sprinkle over the vegetables. Mix oil and vegetable broth and pour over the vegetables. Bake the gratin in the oven for about 50 minutes until the vegetables are cooked.
