For the Powidl Jam with Stevia, cook the pureed plums in a non-stick pan until a thick paste is formed (takes about 3 hours).

Stir in stevia granules and Gelfix. Then stir in the remaining spices in water and rum and stir into the mixture.

Boil for approx. 10 -15 minutes until bubbling. Make a gelatinization test. As soon as the desired consistency is reached, fill the still hot Powidl jam with Stevia into glasses and let cool upside down.
