For the prawns wrapped in potato with curry-banana sauce, use a vegetable spiralizer or peeler to make fine threads to wrap around the prawns freed from the shell, bake in deep fat and season with salt.

Blanch the snow peas in salted water, drain and toss in a tiny bit of clear soup and a flake of butter.

For the sauce, slice a peeled banana, sauté in olive oil and enough curry powder, deglaze with a dash of cider vinegar.

Pour in whipping cream, simmer, puree and finish with a squeeze of lemon juice. Arrange the potato-coated prawns with curry-banana sauce on a flat plate and garnish with finely chopped parsley.
