For the puff pastry pillows, let the puff pastry thaw for 15 minutes. Mix the curd, lemon zest, sugar, nuts and raisins. Roll out the pastry and cut out pieces of 12×15 cm each.

Pile the curd on one side, brush the edge with egg white, fold the other half over and press down. Fry in 180 °C hot fat for 10-12 minutes.

Drain and sprinkle with powdered sugar.
