Puff Pastry with Halloumi

In a small baking bowl, mix the halloumi and other cheese with mint, egg, parsley, chives and pepper. Mash with a fork and mix well. Preheat the oven to 190 °C (gas mark 5). Butter a baking tray. Place the puff pastry slices on top of each other on a work surface, When working with one slice cover the rest with a wet Tsuch, otherwise the dough will dry out. Melt the butter in a small Reindl. Butter a slice of puff pastry and cut into four long strips. Form a tsp with the filling on one corner of the puff pastry strip. Fold another corner over the filling. Fold triangle by triangle to the end of the strip. Do the same with the remaining pastry.

Brush the top of the triangles with butter. Bake in the oven for 10 to 12 min until crispy brown. Serve garnished with mint leaves.

Our tip: Fresh chives are much more aromatic than dried ones!
