Cut the pumpkin into fine cubes and slowly fry with the ground pumpkin seeds in seed oil, season and let cool. Whip the egg whites, then carefully fold in the flour, yolks, spices, melted butter and the pumpkin mixture. Spread on a silicone mat (baking mat) or buttered paper about ½ cm thick. Sprinkle with grated cheese and bake in oven at 180 °C. Allow to cool and cut into diamond shapes.
