In a larger saucepan, sauté the finely chopped onion, add the finely chopped meat and sauté as well, so that it takes on a light color. Add half of the bell pepper and half of the vinegar and then diced tomatoes, tomato paste and spices.

Add 5 tablespoons of soup or water and simmer for 25 minutes. If necessary, pour a little more liquid in between.

Now remove the peel from the pumpkin, remove the seeds and cut the pumpkin finely nudelig or grate with a food processor. Mix the pumpkin with the meat, season with the 2nd half of the paprika and the remaining vinegar, pour in the soup and steam the whole thing together.

Finally, stir the sour cream with a little bit of flour and cook well with the pumpkin goulash.

Season if necessary, the goulash should taste spicy sour, but not too sour.

Tip: Stock up on a range of high-quality spices – it pays off!
