Mix all ingredients well with the pumpkin puree, season and knead into a smooth dough. Sift the dough through a spätzle sieve into boiling salted water. Strain the gnocchi, rinse with cold water and toss in butter with ground pumpkin seeds before serving. Finally, the pumpkin spaetzle can be refined with a few drops of seed oil.
