For the Quiche Lorraine, first mix the flour and butter (cut into small cubes) with your fingers. Then add the water and knead into a dough.

Wrap the dough in aluminum foil and put it in the refrigerator for half an hour. Then preheat the oven. Roll out the dough and put it in a small springform pan. Press well on the bottom and on the edges.

Prick the dough several times with a fork. Then chop the bacon and put it on the bottom of the dough. Separate the eggs and beat the egg whites until stiff.

In a bowl, mix the egg yolks and whipping cream. Season with salt and pepper. Then add the cheese. Finally, fold in the egg whites.

Pour into the springform pan and bake at 180 °C for about 20 minutes.
