Instructions:

For the Quiche Lorraine, quickly knead together butter, flour, egg yolks and salt to form a shortcrust pastry and let rest for about 1/2 hour wrapped in plastic wrap in an icebox.

Dice bacon, render butter in a frying pan and toast bacon until crisp. Brush a tart springform pan (260 mm diameter) or a quiche pan with the drippings.

Roll out the dough on a lightly floured surface and line the pan with it. Arrange a rim about 3 cm high. Prick bottom several times with a fork.

Cut ham into strips. Spread ham and bacon cubes on the dough.

Mix crème fraîche, eggs and sour cream and season with salt, nutmeg and pepper. Pour this amount over the ham filling and bake the Quiche Lorraine on the middle rack in the heated oven at 200 °C in 55-60 min. until light brown.
