For the Quick Spinach Vegetable Pan, wash vegetables, sort spinach. Peel onion and garlic. Cut fennel and onion. Remove stalk and seeds from bell bell pepper and cut into small pieces. Cut garlic into slices.

Heat olive oil, sauté onion, add fennel, garlic, bell bell pepper and tomatoes and fry everything. Add the fresh spinach and let it collapse. Toast pine nuts in an extra pan without fat until fragrant and sprinkle over the Quick Spinach Vegetable Pan.
