Cut quinces in half and remove core.

Boil water with sugar, honey, juice of one lemon, cloves and cinnamon stick. Add the quinces and boil for 20 to 25 minutes. Cool and let the quinces marinate in the broth for at least 12 hours. Remove spices. Drain the quinces and collect the juices. Boil the juices and boil them to syrup. Pour the syrup over the quinces and leave to cool.

Remove quinces from syrup and arrange round side down on dessert plates. Fill each with a little bit of jam in the center.

Whip whipped cream until stiff. Bring quinces to table with honey syrup and whipped cream.
