Instructions:

For the quinoa fitness salad, wash the lettuce and spin dry. Prepare quinoa according to package directions and let cool. Clean carrot and cut into julienne strips.

Defrost the frozen peas. Wash cucumber and cut into bite-sized pieces. Lightly toast the seeds in a non-stick frying pan without adding fat.

For the dressing, peel the garlic clove and press it through a garlic press. Combine olive oil, lemon juice, white wine vinegar and a little sugar. Add the garlic and herbs.

Add the lettuce and cucumber and mix well. Remove the lettuce, mix in the quinoa and arrange on 2 plates.

Arrange cocktail tomatoes and feta cubes on top. Finally, sprinkle the seeds on top.
