Quinoa – these are millet-like grains, which are well-known and popular in South America, and which are also increasingly offered here. Their advantages: they taste aromatically of nuts, are cooked after only 15 minutes and provide us with many valuable minerals and high-quality egg white. Apart from that, the high fiber content helps to lower the cholesterol level.

Simmer the quinoa in the vegetable soup for 15 min. at low temperature.

In the meantime, for the marinade, peel the ginger and chop it very finely. Beat with the mustard, oil and vinegar. Season the marinade with salt and season with pepper.

Clean and rinse the spring onions. Chop the white parts very finely and cut the greens into fine, diagonal rings.

Drain the quinoa and mix it with the marinade and the spring onions while it is still warm. Cut the Bündner Fleisch into strips and sprinkle on top.

Tip. Instead of quinoa, you can also cook this leaf salad with brown rice or millet.
