(*) Wild garlic, the noble cousin of garlic Bring white wine and half of the beef broth to a boil. Pour in the rabbit pieces together with onions and peppercorns and simmer over low heat until the meat is tender (about 1 hour). Remove the pieces of meat and keep warm.

For the sauce, strain the gravy and put it on the fire again together with the remaining beef broth. Mix the butter well with the flour (flour butter), add to the sauce and simmer for a few minutes. Add the wild garlic and the cream of the sauce and season with salt and the juice of a lemon. Repeatedly heat the pieces of meat in the sauce and bring to the table.
