For Stuffed Radicchio, dice onion, mix with oregano, minced meat, marjoram, celery leaves, sweet mustard and a pinch of sugar. Season with paprika, pepper and salt.

Leave the finished meat farce to infuse in the refrigerator case with the lid closed.

Meanwhile, carefully wash the radicchio. Carefully open the radicchio, discard the heart, fill with the meat sauce and tie with kitchen twine.

Sauté briefly in hot oil or fat, add soup and steam at low temperature with lid closed for about 10-15 minutes.

Bind the sauce with a pinch of cornstarch, add butter flakes, finely chopped herbs and a few drops of lemon juice if desired.

Serve stuffed radicchio e.g. with spaghetti.
