Peel the carrots, onions, celery and cut into small cubes. Cut the pancetta into small cubes and mix with the vegetables.

Melt the butter in a large saucepan, sauté the mixture in it, add and brown over high heat.

Once the meat is lightly browned, add the red wine and evaporate. Stir, add the soup with the dissolved meat extract.

Once the soup is also absorbed, mix in the tomato extract. Salt and season with pepper and cover everything together with the hot milk.

Bring to a boil, lower the temperature and stir occasionally to absorb all the liquid.

The cooking time should in no case be less than 1 1/2 hours.
