Instructions:

Heat water in a large saucepan, add basmati, cover and simmer for 15 min. Remove from heat, do not open the saucepan and steam the long grain rice. In the meantime, sauté the onions in the olive oil for 5 minutes until soft. Add the flour and stir until the onions are coated with the flour and sauté for another minute, stirring well. Stir in the vegetable soup and curry powder and do 3 min until the sauce thickens. Add in the squash, broccoli, coconut cream, cauliflower florets, carrots and bell bell pepper and mix well, cover and simmer for 20 min. Stir in remaining ingredients and simmer another 5 min. on low heat. If necessary.

season well with more spices.

Loosen long grain rice with a fork and serve the curry on top.

Tip: Always use aromatic spices to refine your dishes!
