For the raisin cookies, cream sugar and butter in a baking bowl. Add rum and egg yolks one at a time.

Rinse raisins, dry with kitchen roll and stir into the dough with lemon zest and chopped walnuts.

Mix flour with baking powder and gradually add to the batter. Whip the egg whites to egg whites and fold into the batter.

Grease the baking tray with butter. Use 2 teaspoons to place mounds of dough on the baking sheet.

Preheat the oven to 200° Celsius (gas mark 4) and bake the raisin cookies for 15 minutes.
