Instructions:

For the raspberry chocolate cupcakes, separate the egg whites from the yolks and place in two bowls. Beat the egg whites until stiff. Then mix the sugar with the butter. Add the yolks and mix again briefly.

Mix the flour with the baking powder and cocoa and add slowly by the spoonful while mixing constantly. Add the whipped cream to the dough mixture and fold in with a whisk.

Pour the batter into ramekins and bake at 180 degrees for 15 minutes.

For the frosting, whip the cream, stir the mascarpone well, puree the raspberries and mix the ingredients together with 3 tablespoons of powdered sugar.

Use a piping bag to spread the frosting on the cupcakes and decorate with chocolate sprinkles.
