Instructions:

Mix raspberries with powdered sugar, bring to the boil and pass through a sieve.

Beat the eggs with the powdered sugar, vanilla sugar and white wine over a vapor until foamy, remove from heat and continue beating until the mixture has cooled.

Dissolve the gelatine, whip the cream until stiff and fold into the egg mixture together with the raspberry brandy, lemon juice and raspberry puree.

Fill dessert glasses halfway, top with raspberries and spread the remaining cream on top.

Serve well chilled.
