For the ratatouille, heat olive oil in a large pot and sauté the diced onion and sliced zucchini.

Add the bell pepper pieces and sliced melanzani and sauté vigorously for a few minutes. Chop the peeled tomatoes and add them with the juice, salt, pepper, garlic, herbs, soup seasoning and sugar.

Let the ratatouille simmer for about 20 minutes, the vegetables should not boil over.
