Instructions:

Boil potatoes with skin until soft, peel, quarter, toss in butter, add chopped parsley and salt.

Rub fish fillet with salt, garlic and rosemary. Heat some olive oil in a pan and sear the fish fillets skin side down for about 4 minutes until the skin is crispy.

Then turn to the other side and fry again until the fillets are lightly browned.
