For the rhubarb-apple cake, separate the eggs and beat the egg whites until stiff. Beat the yolks, oil and powdered sugar until creamy. Mix flour with baking powder and fold in. Carefully fold in the snow.

Cut apples and rhubarb into small pieces. Bring the cinnamon bark to the boil with the apples and water and simmer for about 10 minutes until soft, add the rhubarb and continue to simmer for about 5 minutes.

Mix in the apple-rhubarb compote (without water), spread the dough on a baking tray and bake the rhubarb-apple cake at 180 °C top/bottom heat for about 40 minutes.
