A fruit cake must be juicy, sweet and tart at the same time. This is best achieved with rhubarb, which, however, must be carefully cleaned and freed from the peel and finally sugared long enough.

The rhubarb pieces are then put into a sponge cake, which rises wonderfully and becomes wonderfully crumbly if you just stir it for a long time.

Finally, a tiny bit of baking powder also adds airiness, and a good dash of orange liqueur adds an aromatic perfume.

Let the butter soften at room temperature. In the meantime, already prepare the mold and clean the rhubarb.

Whip the softened butter in a food processor or possibly with a mixer to a pale white cream, gradually adding the sugar and finally the eggs one by one.

When the mixture has combined to form a creamy, thick cream, season with lemon zest, salt and vanilla sugar.

Sift in the flour, cornstarch and baking powder and quickly incorporate. Then the mold should be prepared: buttered and dusted with flour. The rhubarb should also be cleaned, threaded and cut into pieces 5 centimeters long.

Fill the dough mixture into the mold. Put the rhubarb pieces in close together, vertically from top to bottom.
