For the ribs from the oven, start the preliminary work at least 4.5 hours (overnight) before eating.

First, wash the pork ribs in cold water and dry them with paper towels. Mix the salt, pepper and garlic together and rub it into the ribs.

Put the rest of the seasoning mixture in a shallow dish with the rest of the herbs and add wine. Put the ribs in, close airtight and refrigerate. Preheat the oven to 180 °C.

Line a baking sheet with baking paper, folded in half. Remove the pork ribs from the marinade, wipe briefly and turn in oil. Place on the baking sheet (or grill rack with grease trap).

Put in the oven for about 40 minutes until all sides are browned. The meat is cooked when it comes off the bone easily.
