For risi-bisi, first shell the peas and wash them carefully.

Heat a little oil with half the butter, then sauté the parsley and onion until translucent. Add the peas and rice and fry until the rice is translucent. Pour the soup and let it all boil down, then gradually add the rest of the soup until the rice has the desired consistency.

Stir in the Parmesan cheese and the remaining butter. Season the risi-bisi with salt and pepper.
