Instructions:

Season the meat with salt and pepper and rub with the garlic. For the filling, mix the carrot, leek, onion, celery leaves and parsley, season with paprika powder and spread evenly on the meat. Press well until smooth.

Roll up the meat, tie tightly and roast in the oven heated to 180 degrees – on the broiler above the juice pan – for 2 1/2 to 3 hours. Brush a few times with the roasting juices.
