Remove the peel from the potatoes, grate finely with a kitchen grater, place in a suitable bowl and season lightly with salt. Season the Steinbeisser with salt and pepper and spread a thin layer of mustard on one side. Sprinkle the potato flakes on the mustard side and press lightly until smooth.

Fry the fish on the potato side in enough hot oil to start with, then turn it over to the other side and bake until golden brown.
