For Rehnuss in herb coating, season the Rehnuss with salt and pepper. Cover the bone sides with herbs. Roll up with the pork net and tie.

Fry evenly in a hot pan. Roast in the heated oven at 180 degrees Celsius for ten minutes. Baste in between. Remove the roe deer nut and keep warm.

Strain the gravy and add the game stock. Boil down and refine, add cold butter. Cut the venison in the herb coating into even slices.
