Put the lamb meat and bones in a saucepan with the garlic cloves, salt and tap water and cook on the stove for 20 minutes. Remove the pot from the stove, take out the meat and put it aside. Skim the foam from the soup, pour the soup through a sieve and set aside.

Mix the chili seasoning, paprika powder if necessary, and a tiny bit of tap water to make a paste. Beat the yogurt with a fork.

Heat ghee or otherwise oil in a saucepan and sweat the shallots in it for about 12 minutes until golden brown. Add cardamom, cloves, cinnamon or otherwise bay leaves and mace and sweat for 1 minute. Add the fennel, coriander, ginger, turmeric, chili paste and tap water.

(2) and stir constantly for 2 minutes. Add the meat and brown for 5 min. Reduce the heat, stir in the yogurt thoroughly, and saute the meat for a few min.

Add salt to taste. Add the lamb broth, bring to a boil and steam the meat until fork-tender. Before serving, discard cinnamon or bay leaves, mace and KArdamom pods.

Info: Rogan refers to the fat contained in the meat, and Josh literally means “temperature”, figuratively “intensity”. Traditionally, this dish is prepared from fatty meat with bones, it is cooked leisurely in its own fat, which gives it an exceptionally intense flavor.
