For the romaine lettuce with Caesar dressing and brioche croutons, first cut or pluck half the brioche into suitable pieces as desired. Spread on a baking sheet and bake at 190 °C for about 10-15 minutes.

Spread the bacon on a baking tray with baking paper, season to taste and weigh down with baking paper and another tray. Bake in the oven at 190 °C for about 15 minutes. When the brioche is done, put it in the oven.

Wash the lettuce and cut it into suitable pieces.

For the dressing, finely chop the garlic and squeeze with a little salt to release the oils from the garlic. Mix the yogurt into the mayonnaise, more or less yogurt according to taste. Add the parmesan, garlic and a little vanilla. You should not taste the vanilla, it only serves to neutralize the smell of garlic on your breath. Season with salt if necessary.

Arrange the lettuce hearts. Pour some dressing on top and garnish with brioche and bacon. Serve romaine lettuce with Caesar dressing and brioche croutons.
