Instructions:

For the root vegetables with hemp seeds, Vogerlalat and goat cheese, first boil the root vegetables in plenty of salted water until al dente, then rinse in ice water. Rub the peel off the vegetables with a tea towel. Cut larger pieces in half lengthwise.

Roast the hemp seeds without oil in a pan until golden, remove from heat and mix in the remaining ingredients. Season with salt and pepper.

Finely puree the Vogerlalat with oil and ice cubes and season with salt. Break the goat cheese into coarse pieces.

Spread the Vogerlsalat puree flat on a plate and place the root vegetables on top. Arrange the hemp seeds and goat cheese on top and garnish the root vegetables with hemp seeds, Vogerlsalat and goat cheese with fresh cress.
