For the rösti, peel the potatoes and grate coarsely on a grater. Add the diced onion, bacon and spices.

Mix everything well. Heat the clarified butter in a frying pan. Pour the well-mixed potato mixture into the pan and press it down with a spatula so that it forms a kind of cake.

Fry for approx. 15 – 25 minutes covered (with plate or lid, but must rest on the Rösti) at medium heat. In between, always brush the edge of the pan with butter.

After about 15 – 25 minutes, turn the Rösti (should now be golden brown) onto a plate and then slide it back into the pan.

Now sprinkle the browned side with some grated cheese, put the lid back on, and continue frying for the same amount of time (15 – 25 minutes).

The Rösti is ready when the outside is golden brown and crispy and the potatoes have the desired consistency.
