Remove peel from potatoes, grate on a rösti grater, season with salt and pepper. Fry bacon without adding fat until crispy, add onions and steam until well softened. Cool down. Grate Appenzeller on a rösti grater, add to potatoes, onion and bacon, but do not mix yet.

Mix cream cheese and half cream, add eggs and mix well. Add to the potatoes and only now mix everything together exactly, the amount should remain loose. Do not knead or press together. Fill the potatoes with the mixture and cook for 40 minutes at 200 degrees Celsius.

Bring to the table hot.
