Instructions:

Coarsely chop olives. Mix the sausage meat, olives and parsley well. Spread the ham slices evenly on the rolled out dough and coat with the sausage meat. Roll the dough loosely into a roulade, place on a greased baking sheet. Brush the roulade with egg yolk and bake in a heated oven at 200 degrees for half an hour. Rinse and clean tomatoes and lettuce. Cut the tomatoes into slices. Mix all the ingredients for the salad dressing and drizzle on the prepared lettuce and tomato slices.

Cut the baked roulade and serve on plates with the lettuce and tomatoes.

Tip: The salad dressing recipe can be varied with chopped pickled gherkins or capers, perhaps also doubling the amount of ingredients given.
