For the Sacher cake, preheat the oven to 160 degrees convection. Separate the eggs. Beat egg whites with granulated sugar and a pinch of salt until stiff.

Chop the chocolate coating and melt in a bain-marie. In a second bowl, beat butter and powdered sugar until fluffy. Add yolks and couverture and mix well.

Then add snow to the yolk mixture, sift flour over it and fold everything in. Pour the dough into a springform pan (26cm diameter) lined with baking paper. Baking time: 50-60 minutes.

After baking, turn out onto a cake rack and when completely cool, cut 1x in half and fill with jam. Then glaze.
