For the Sacher cake, cream the butter, sugar and vanilla pulp in a bowl until fluffy. Stir in the egg yolks one by one until the sugar has completely dissolved. Preheat the hot air fryer to 160 degrees for about 3 minutes.

In the meantime, roughly chop the chocolate and melt in a hot water bath. Then let cool briefly and slowly stir into the egg yolk-sugar mixture.

Sift the flour and baking powder together and stir into the mixture. Beat the egg whites with salt and powdered sugar until stiff and slowly fold in.

Line a 16-18 cm diameter baking pan with baking paper or grease it.

Pour in the batter and bake in a hot air fryer at 160 degrees for 35-40 minutes. After baking, let cool briefly, carefully loosen from the edge with a spatula and turn out onto a cooling rack.

After cooling, cut the cake in half crosswise and spread the bottom with the jam. Put both halves back together and mix the remaining jam with 1-2 teaspoons of water and brush the cake all around again with it.

Melt the chocolate coating in a hot water bath. If the jam on the cake has already dried a little, spread the chocolate coating over the entire cake and smooth it out.

Allow the finished Sacher cake to cool again slightly.
