Saddle of Wild Boar Sardinian Style

Instructions:

1. peel the onions and carrots, chop the green of the carrots 2 cm above the stem. Peel the celery and cut into 2 cm cubes. Coarsely grind the cinnamon stick, cloves and the star anise in a mortar and put them in a spice grinder with the pepper and coriander seeds and the whole cumin. Preheat the oven to 100 °C.

2. rinse and dry the saddle of wild boar, season with salt and season from the grinder. Heat 3 tbsp olive oil in a roasting pan and sear the meat all over, place on a wire rack. Cut the dried plums in half. In a frying pan, caramelize the powdered sugar until light. Add the prepared vegetables and 2 tbsp olive oil, sauté the vegetables briefly and extinguish with the red wine vinegar.

Add the bay leaf spice, a little ground cinnamon, the dried plums and the raisins. Pour the game stock and cook gently to 1/3. Mix in the chocolate with the juniper berries, season with salt and a pinch of nutmeg.

Remove the hard edges from the bacon slices and cut them into strips.

Fry in a frying pan with the remaining olive oil until crispy. Drain on kitchen roll.

Cut the saddle of wild boar diagonally into narrow slices. Spread vegetables and dried plums including sauce evenly on heated plates. Arrange the meat slices on top, place the bacon strips on top.
