For the salad dressing, gently stir the oil into the mustard and season with pepper, vinegar, salt and a tiny bit of sugar.

Season the salmon with salt and pepper and roast it whole in olive oil for 5-8 minutes. Now place on a plate and marinate with four tablespoons of the salad dressing.

Clean the lettuce, rinse and drain well, pick apart. Clean the beans and cook them in boiling salted water until al dente, drain and rinse with cold water. Cut potatoes and eggs into small cubes. Cut peppers into lozenges (1 cm in size). Remove peel from onions and cut into very thin rings.

Put all salad ingredients plus olives, capers and anchovies in a large bowl and dress with the salad dressing.

Pluck the cooled salmon into bite-sized pieces with a fork and arrange on the lettuce.

Sprinkle with tarragon and bring to the table with fresh baguette or farmhouse bread.
